This recipe comes from my mother as it is something I used to eat as a child. It is a great way for children to eat their carrots. Best of all, make it the day before when you have a few spare moments and it will be ready for your meal.
Shredded Carrot Salad
- 2 pounds of carrots, grated (a food processor makes quick work of this)
- 1 cup raisins
- 1 cup Miracle Whip Salad Dressing (Do NOT substitute mayonnaise)
- 1 can mandarin oranges drained
- 1 cup miniature marshmallows
