It seems like when a recipe calls for lemon or orange zest that is when I don't have lemons or oranges on hand or the price of them is high. On the flip side, when I do have these wonderful fruits, I'm not needing their zest. I don't know why I never thought of this before as I think this is super clever.
When peeling oranges, lemon or other citrus fruit, peel strips of zest first and collect them in a zip lock bag. Tell your kids you want the fruit peels when they reach for an orange. Store these strips in the freezer and keep adding to them. When the bag is full, just run the frozen peals through a food processor and again refreeze them. You will now have zest on hand and won't have to buy citrus when the price of it is high. This also makes a pretty garnish to some vegetables.
